When he died in 479 B.C., Confucius had more than 600 books about rose care in his library. Since then, most every herbal ever written has mentioned the beloved rose. One 16th century herbal said smelling dried roses would comfort your brain and heart rose fragrance is used in many perfumes and lotions even now. To the Greeks, a rose has long been a symbol of love and beauty. Ancient Romans imported roses from Egypt, then carpeted their banquet room floors with rose petals. For special occasions, they even filled fountains with rose water. Roses are often used for a uniquely floral, mildly sweet taste in exotic cuisines. Rose petal tea is recommended by European herbalists to keep the mind clear and calm.
