Recent studies of hops have revealed an interesting contrast as hops dry and age after being harvested, certain compounds lose strength while others actually get stronger. The polyphenolic principles that may help digestion fade quickly only 15 percent of this activity remains just 9 months after harvesting. However, a compound called "2-methyl-3-butene-2-ol" becomes more concentrated as hops age this compound is believed to support restful sleep. Educated herbalists now say dried hops support sleep, while fresh ones are more likely to soothe your stomach.
