This sour-tasting fruit comes from India, where it has traditionally been used to flavor curries and preserve foods. Most of the sour taste comes from a unique fruit acid called HCA, which is short for "hydroxycitric acid." Scientists have studied HCA for at least 30 years to learn more about its apparent benefits on digestion. In particular, HCA appears to help inhibit conversion of carbohydrates to fats, which would maintain healthy overall levels of fat in the blood. HCA is a natural fruit acid similar to the citric acid found other citrus fruits, like oranges.
