Barley
Hordeum vulgare
Probably the world's oldest domestic grain crop, barley has been grown in Egypt since 6000 B.C. It is a highly nutritious food that grows well most anyplace, even where the climate is cool and the growing season short. Greeks and Egyptians considered barley a sacred grain, and Hippocrates is said to have written an entire book about the benefits of barley gruel. Barley's true fame, however, has long come from another use entirely. Ever since at least 2500 B.C., people have used barley to brew beer and ale. In grain form, barley is believed to have soothing properties, and most people find it very easy to digest. We use barley in our herb teas because it provides a natural, nutty flavor profile.
