Matcha is a type of green tea that requires unique farming and processing techniques. The tea leaves are shade-grown for some or all of their growing period. Avoiding direct sunlight produces more chlorophyll, giving this tea an exuberant green color. Once the buds are harvested, the leaves are dried out and ground into a very fine, talc-like powder.
